Carrot and walnut slice

Ingredients

  1. Preheat oven to 180 degrees.
  2. Add carrots, apple, oats, flour, rice malt syrup, coconut oil, coconut, chia seeds, eggs, vanilla and cinnamon to bowl. Mix 20 seconds/Speed 6.
  3. If using, add walnuts to bowl. Mix 5 seconds/Speed 4.
  4. If using, add sultanas to bowl. Mix 5 seconds/Speed 3/reverse.
  5. Pour mixture into a greased slice tin. Bake for 20 minutes or until top is browned.
  6. Cool before cutting into squares.
  7. Store in fridge.
Recipe Notes

If you want this a little sweeter you could use honey instead of rice malt syrup.

I reduced the amount of sweetener form the original recipe as I added the apple but you could increase if its not enough for your tastebuds.

You can use olive oil instead of coconut oil if you don’t have any.

I use my gluten free self raising flour mix but normal self raising flour will work too.
