I’ve been making these ‘burgers’ for a few years now and think I’ve finally perfected the ingredients and the Thermomix method! My family (actually mostly my husband) are the guinea pigs who get to eat the variations along the way.
They are super easy to make and cook. Better still the mixture makes enough for left overs which is always a bonus in my book.
They are perfect for dinner paired with a salad or vegetables. Or you could make them as a delicious and nourishing snack food for after school or even a party option.

Carrot, feta and chicken burgers
Bite sized chicken delicacies perfect for dinner or just a finger food snack
Add onion, garlic, carrot and parsley to Thermomix bowl. Chop for 5 seconds on Speed 5. Scrape down sides of bowl
Add chicken mince and egg to Thermomix bowl. Mix for 10 to 15 seconds on Speed 5 until combined.
Add feta cheese to Thermomix bowl. Mix for 5 to 10 seconds on Speed 3 Reverse
Add oil to frying pan and heat to a medium heat.
Place a tablespoon sized ball of mixture in the pan and press down to flatten into a burger. Repeat with as many as you can fit in the pan. I usually have two pans on the go at once to make the cooking process faster! Turn over after 4-5 minutes when the underside is golden in colour. Cook through on the other side thoroughly for a few more minutes before removing from pan. You may need to turn the heat down slightly so they don't burn
If you don't have chicken mince and wish to make your own from chicken breasts, simply chop the breasts into pieces and add to the Thermomix bowl. Mix for 10 seconds on Speed 8 to make the mince. Do this step prior to the others as above and remove mince from bowl before chopping the other ingredients.
These would also work well as chicken 'balls'. Simply roll into balls and place into mini muffin trays that have been greased. Cook in an oven pre-heated to 180 degrees celsius for about 20 to 25 minutes until golden.
